Snickerdoodle Blondies

Filed under: Cookies — cupcakingandbreadmaking @ 4:37 pm

So I made these the same day as I made the oatmeal raisin bars. I was unsure on what I was going to bake but I decided on this.

Are blondies like brownies or cookies? They are blonde colored…

hmmmmmm….

Anyways… I used this recipe.

It’s the usual for recipes.

The dough was very sticky.

The final result.

I liked these blondies but some people thought they were a little hard. I think this would taste amazing with milk!

Oatmeal Raisin Cookie Bars

Filed under: Cookies — cupcakingandbreadmaking @ 9:58 am

So I decided to make this spur of the moment.

I’ve never made oatmeal raisin cookies before (shocker) so I thought it was about time.

I decided on cookie bars because I was limited on time and it is a lot easier to assemble.

Okay… get all my ingredients out.

One thing I really like about this recipe is that it is pretty much one bowl = Easy clean up!

Do all the mixing… Pour in the oats

Then the raisins…

Mix it all together…

Pour it into a lightly greased pan

And you have your result!

I really liked this cookie… gooey and plenty of raisins! I will

definitely make this again.

Banana Bread

Filed under: Breads — cupcakingandbreadmaking @ 3:17 pm

mmmmmmmmm the heavenly aroma of bananas baking in the oven ๐Ÿ™‚

I love when I have a bunch of overripe bananas calling my name to make banana bread. I’ve tried a billion of recipes, yet I always go back to the first one I’ve ever tried. I use the banana bread recipe in Better Homes and Garden cookbook I own.

The recipe calls for shortening, but I used butter instead.

Okay… let’s get started. Mash up the bananas (about 3-4) and mix all the dry ingredients.

Alternate mixing the bananas and dry ingredients into the creamed butter and sugar.

Don’t overmix.

Add nuts, chocolate chips, raisins, etc at this point.

I did half plain, and other half mixed with raisins, walnuts, and pecans.

Put it in the oven and enjoy the smell ๐Ÿ™‚

Baked banana bread.

I had no patience to wait for it too completely cool… and I ended up eating about 1/3 loaf (shhhhhhh…)

One thing I love about this recipe is that you can taste the butter in the loaf so there is no need to add more butter ๐Ÿ˜›

Oreo Cupcakes

Filed under: Cupcakes — cupcakingandbreadmaking @ 6:29 pm

When my friend Sylvia first told me of Oreo Cupcakes, I was thinking, “Who would want that???”

Well, everyone wants it!

I made them for Sylvia’s birthday back in September and I decided to make them again for a bake sale.

I used this recipe

OREOS

Chopping the oreos was a pain because I’m not pro yet.

I put the oreo halves in the cupcake liners…

Filled them up…

And baked!

I used the frosting included in the recipe. It never came out “light and fluffy”

It was still a good frosting recipe. It just wasn’t pipeable ๐Ÿ˜ฆ

Also, I kept eating the cookies so I didn’t have enough to garnish in the end.

Until next time!

Sugar Cookies

Filed under: Cookies — cupcakingandbreadmaking @ 6:28 pm

Mmmmmmm good ‘ol sugar cookies.

I made a batch of sugar cookies using this recipe

I decided to cut the batch in half, refrigerate one and freeze the other.

MAKE SURE THE DOUGH IS COLD!! or else it is not pleasant to work with.

Rolled the cookies and cut em with my super cute cupcake cookie cutter!

Sprinked some sprinkles on because I did not have time to royal ice them.

Here is a picture of the baked cookie ๐Ÿ™‚

A couple days later, I decided I wanted to make the other half of the dough.

I let it thaw for about an hour. Rolled it and cut them into stars.

Finished result:

The sugar cookie recipe was great! They tasted the same both times so you can definitely freeze this cookie dough. The only bad part was it is slightly greasy and not sugary enough without icing.

But next time, I will make time to ice!

Lemon Bars

Filed under: Pies, tarts, etc., Uncategorized — cupcakingandbreadmaking @ 3:03 pm

Ahh… all the possibilities out there.

I’ve seen to many recipes for lemon bars I didn’t know which one to choose.

I decided to use this recipe.

I opted for a “lighter” version but next time I would like to compare them head to head.

Pouring lemon filling on top of crust…

The result:

Overall I thought they tasted pretty good. Not over lemony but the crust was not very flavorful. Still delicious

Apple Tart

Filed under: Pies, tarts, etc. — cupcakingandbreadmaking @ 6:53 pm

Yes, yes. I know an apple tart is not a cupcake or bread, but it is a dessert.

I needed to make something for a Renaissance project and one of the things I found that existed back then was the apple tart.

I have no idea what the exact recipe was, but I decided to use this recipe.

This recipe was pretty easy to make.

I forgot to brush the butter on top after which probably does not make it look as attractive. And my formation isn’t exactly the best. Haha.

Before baking: (excuse the lighting)

After:

I am excited to see how this tastes.

You can’t really go wrong with butter, flour, apples, and sugar ๐Ÿ˜›

Red Velvet Cupcakes

Filed under: Cupcakes — cupcakingandbreadmaking @ 4:55 pm

I just recently tried my first Red Velvet Cupcake. I still can’t determine what it actually “tastes” like. I remember when I was younger, the dyed color kind of freaked me out. But this past summer, I decided it was time for me to try something red velvet.

I instantly loved it. I’m not sure what about it I love, I just know I do.

This month is Breast Cancer Awareness Month, and my school had a walk. We were also selling cupcakes to raise money and I decided to make red velvetย  cupcakes. I attempted to make them pink… but it didn’t work out ๐Ÿ˜ฆ

The color turned out more red-brown:

Baked and ready to be frosted!

Frosted and ready to be sprinkled ๐Ÿ˜‰

Wooo!

I know they don’t look the best because I was too lazy to pipe them. But I used cream cheese frosting and the cream cheese wouldn’t smooth out completely ๐Ÿ˜ฆ

But the cupcake tasted good overall.

I’m not sure if I will use this recipe again, but I did like it.

I also forgot what recipe I used…

But I do remember I used butter, not oil.

I can’t wait to make red velvet cupcakes next time!
